The wife has been on a kick recently, looking at new recipes. I gather she found a group on Facebook or something.
Anyway, she keeps sending me these recipes that she wants to try. Since her back issues prevent her from standing very long, the cooking duties fall to me.
One of the recipes she sent over was for Spinach and Artichoke Wonton Cups. You can find the recipe here if you wish to try it yourself.
We made a trip to the grocery store to get the ingredients. They didn’t have wonton wraps to make the cups so we ended up using Phyllo Dough.
The wife minced he artichoke hearts, while I got the rest of the ingredients ready to go.
Everything went fairly smoothly. The Phyllo Dough was a little tricky. It comes in rolls of incredibly thin dough sheets. Getting them apart was a challenge. I separated each sheet into quarters by folding them and making a crease, just like with a piece of paper, then tearing along the crease. Worked pretty well.
I sort of folded the Phyllo Dough into the cups of the muffin tin, then baked them for five minutes in the oven like the recipe called for. I took them out, scooped the filling inside each pastry cup, then cooked them for ten minutes. We had some leftover filling mix so I made another four. Turns out we still had filling left after that so I ended up making another six.
Overall, a pretty easy recipe to make. I suppose if you needed a simple appetizer to make for a dinner this would do nicely.
The ultimate question though is “how did they turn out?”
The wife liked them. We sent some to a friend of ours down the hill and gave a few others to one of our neighbors. They had previously given us food in a container, and we had to return it to them. Louisiana rules hold that if you get a container of food, you need to return it with food in it.
I myself did not care for them. I guess they turned out well enough, but I don’t like either spinach or artichoke hearts, so I wasn’t expecting to like them.
